Oma's Spaetzle

If you ever want to make homemade noodles, this is probably the easiest way to do it. We use an improvised press to crush the batter into strands over the boiling water.

Ingredients:

2 cups all-purpose flour

6 large eggs

1/2 cup water

1/2 cup butter or margarine

Instructions:

Add flour to a large mixing bowl. Whisk eggs in a separate bowl. Add eggs to flour and mix vigorously slowly adding water to make a thick batter. Let batter rest about 30 minutes or more at room temperature. 

Bring a large pot of salted water to boil. Pour spaetzle dough through spaetzle maker or colander directly into boiling water so small, elongated drops fall in. Boil until spaetzle rises to the top. Use a slotted spoon to remove spaetzle from water. Place spaetzle on a platter and add butter or margarine while spaetzle is hot to melt the butter.

An alternative is to melt the butter in a skillet over medium heat. Place drained spaetzle directly into butter and fry 2-3 minutes. Serve hot and garnish with minced parsley.
